This simple vegan sandwich is so packed with delicious, savoury ingredients, I guarantee you won’t miss the meat or cheese. It is also extremely fast and easy to prepare, and will only dirty one pan. I suppose you could put it in a panini press for a nice grilled sandwich, but it’s not necessary. I dare hardcore carnivores to try this and not love it.
*You can probably mix and match on the ingredients, adding things like sprouts, cucumber, fresh spinach, etc. But this is the basic sandwich I always build. The combo of ingredients make this very hearty and satisfying. This makes four good-sized sandwiches.
Your favorite bread (panini or baguette work best)
Olive Tapenade (I prefer green olive but black would work as well)
1 Avocado, halved and sliced
1 Tomato (I’ve used Roma in the past, but this time used a really sweet heirloom)
1 Yellow Onion
8 oz. Mushrooms, thinly sliced (I’ve also used whole portobellas in the past, but I actually liked the smaller sliced mushrooms better for the purpose of maintaining sandwich integrity once you bite into it).
This is clear-cut enough that I shouldn’t have to describe it, but I’m bored.
*Sautee (separately so they will brown properly) the onion and mushrooms with just a bit of salt and pepper over medium high heat. You can do this with a bit of olive oil or even in a dry pan if you’re not afraid of non-stick and want to save some calories.
*Swab one side of your fresh bread with hummus and the other side with the olive tapenade. This keeps everything held together. Then layer the mushrooms, onion, avocado, and tomato.
*Enjoy. Between the salty/umami flavor of the tapenade and mushrooms, and the creaminess of the avocado and hummus, you will never miss the meat or cheese. The flavors all marry together wonderfully, not to mention all of the ingredients are extremely nutritious on their own. Try it!
